COMFORT ZONE

This is one of my favorite cake recipes.


High in calories? You bet! Delicious? Absolutely!


Pineapple Cake with Dulce de Leche

Makes one 9x13 inch cake

Cake ingredients:

2 cups cake flour

1 1/4 cups granulated sugar

1 tsp. baking soda

2 whole eggs, lightly beaten

20 oz. can crushed pineapple in own juice

1/2 cup firmly packed brown sugar

1/2 cup chopped pecans


Icing:

1/2 cup confectioners sugar

1 1/2 sticks unsalted butter

1 tsp. vanilla extract

1 cup sweetened condensed milk


Pre-heat oven to 350 -F degrees. Lightly spray a 9x13 cake pan; set aside. Mix together the brown sugar and chopped pecans and set aside.

Sift together flour, sugar and baking soda in large bowl. Add eggs and crushed pineapple and the juice; blend to produce a smooth batter.

Pour cake batter into the prepared cake pan. Sprinkle the sugar/nut mixture evenly over the top of the cake.
Bake cake for 40 minutes or until tester can be cleanly removed from the center of the cake.

Just before cake is done, blend together in a medium saucepan the confectioners sugar, butter, vanilla and condensed milk. Bring mixture to a boil over moderate heat. Stir constantly for 5-8 minutes. Pour icing over hot cake after it's taken out of the oven.

It's easy to make. I'm making it next week, can't eat it too often hips won't appreciate it.
